Amuse-bouche: Avocado, Cheese & Walnuts
It has been a long while since I’ve posted any of my recipes but here I am back late spring with something fun for you to try.
The other day, I stumbled across a cocktail party planning book that had tons of great ideas for small gatherings and this fun amuse-bouche is a spin off idea that I came up with after figuring out how to make it Tafari-delicious.
Ingredients:
– 1 Avocado
– 1 tblsp Goat cheese
– 1 tblsp Cream cheese (low fat)
– 1 tsp Honey
– 3 tsp Fresh lime juice
– Red pepper flakes
– Walnuts
– Baguette of your choice
– Olive oil
The Jump Off:::::
Baguette –
Slice your baguette into several disc size pieces. I went with a 7 grain baguette from Panera Bread. Line your baguette discs on a baking sheet and brush on a little olive oil.
The bread should bake in a pre-heated oven at 350º for about 15 minutes. When done baking, set it aside to cool.
Topping –
Let your goat cheese and cream cheese soften at room temperature. Once soft, add to you mixing bowl along with the other ingredients. Be sure to cut your avocado meat into small enough chuck so that it is easier to mix. Beat ingredients until blended well and smooth (I used a fork and my arm was pretty sore, so a hand mixer will be your friend for this…) add salt and pepper to taste.
After your mixture is all mixed, let it chill in the refrigerator for about 20 minutes to stiffen a bit. The lime juice will prevent the avocado from turning brown…
Plating –
Add a dollop of you concoction to your toasted baguette discs, top with a walnut and sprinkle red pepper flakes for a bit of surprise heat.
The end result is a fresh smooth creamy, crunchy appetite pleaser!
